White Chicken Chili Recipe

You will need the following:

• 4 (15 oz.) cans white beans, drained
• 2 tsp. cumin
• 2 lbs. diced cooked chicken
• 2 tsp. ground oregano
• 6 cups chicken stock
• 1/4 tsp. ground cloves
• 2 medium onions, chopped
• 1/4 tsp. cayenne pepper
• 4 garlic cloves, minced
• 2 cups grated cheddar cheese
• 2 (4 oz) cans mild green chilies
• sour cream, chopped tomatoes, extra cheese, and cilantro

In a large heavy pot, saute onions until softened. Add garlic, chilies, and spices, and cook over low heat for 1 minute. Use the AVON Edgeless Can Opener with Strainer (pictured at left) to add beans.  Add the stock, then bring to a boil and simmer for 1-2 hours. Add chicken and 1 cup of cheese, stir and cook for 5 more minutes.
